Roasted Red Pepper Tortellini Bake
1 pkg tortellini--cooked according to directions.
1-2 jars alfredo sauce (I used about 1 1/2 but later wished I'd put in the whole 2. Judge on the amount of tortellini.)
1 roasted red pepper
broccoli florets
1 lb grilled chicken--cut in small pieces
bread crumbs
Slice red pepper into thin strips, place on baking sheet. Brush with olive oil and broil on high for about 10 minutes, or until they are just starting to blacken on the edges. Place roasted red peppers and alfredo sauce in a blender and blend until creamy. Combine chicken pieces, broccoli florets, cooked tortellini and sauce in a baking dish. Top with bread crumbs and bake at 350 for about 25-30 minutes or until warmed through.

Recipe #7 Chicken Farfalle (Bowtie Chicken)
1/2 box Farfalle pasta
1 pound chicken pieces (I used boneless skinless breasts)
Balsamic Vinaigrette Dressing
3 cups fresh spinach (or other veggies. I used all of my spinach for the
first batch so this one has broccoli and cauliflower. Oops)
Mushrooms
3/4 cup spaghetti sauce ( I used Ragu Garden Veggie, but any would work)
Parmesean cheese
Salt
Pepper
Garlic Powder
Cook pasta according to directions. Drain.
Cut chicken into bite sized pieces. Place in large, hot, frying pan. Add about 1/3 cup of dressing, garlic powder, salt and pepper. When chicken is cooked through, drain excess liquid. Add spinach and mushrooms to pan, cover to wilt (3-5 minutes).
In large bowl, toss pasta and chicken mixture with spaghetti sauce and Parmesean cheese to taste. Season with salt and pepper. Serve.
By the way, this one is kid approved! My 3 year old ate it all and asked if we could have it again tomorrow. I think it's the shaped pasta.

Tortellini Soup
Chicken Tortellini Soup
3 cans (14 ½ oz) chicken broth
1 can cream of chicken soup
2 C. cooked, cubed chicken
1 C. chopped yellow onion
1 C. chopped carrots
1/2 C. water
little (1/2 tsp.): minced garlic
basil leaves
oregano
1- 9 oz. pkg. cheese tortellini
1- 10 oz. pkg. frozen broccoli
Boil all ingredients except tortellini and broccoli in a large pot then add 9 oz pkg. cheese tortellini. Simmer uncovered for 30 minutes. Add thawed 10 oz. pkg. frozen broccoli. Simmer 5-10 more minutes.

Prosciutto, Spinach, and Pasta Casserole
Here is the picture of that casserole I left the recipe for earlier. I really enjoyed the food and you'll have to ask Mom what she thought of it because she made it the other day. Maybe the picture is tempting. (Are you happy Tom?) :)

Prosciutto, Spinach, and Pasta Casserole
Prep: 25 minutes
Cook: 25 minutes
Ingredients
* 2-2/3 cups dried bow ties, penne, or ziti (8 ounces)
* 2 medium onions, cut into thin wedges, or 5 medium leeks, sliced
* 2 cloves garlic, minced
* 1 tablespoon butter or margarine
* 1/4 cup all-purpose flour
* 1/2 teaspoon anise seeds, crushed
* 1-3/4 cups milk
* 1-1/2 cups chicken broth
* 1/4 cup grated Parmesan cheese
* 1 10-ounce package frozen chopped spinach, thawed and well drained
* 2 ounces prosciutto, cut into thin bite-size strips
* 1 medium tomato, seeded and chopped
I didn't use any of the anise seeds. I didn't have the prosciutto so I used lunch meet instead. It tasted fine. I also sprinkled some parmesan on the top once it was in the pan ready to eat. It was so so good.
Directions
1. Cook pasta according to the package directions. Drain; rinse pasta with cold water. Drain again.
2. In a large saucepan cook onion and garlic, covered, in hot butter about 5 minutes or until onion is tender, stirring occasionally. Stir in flour and anise seeds. Add the milk and chicken broth all at once. Cook and stir until slightly thickened and bubbly. Stir in Parmesan cheese. Stir in the cooked pasta, spinach, and prosciutto. Spoon the mixture into a 2-quart casserole.
3. Bake, covered, in a 350°F oven for 25 to 30 minutes or until heated through. Let stand about 5 minutes. To serve, stir gently and top with chopped tomato.
4. Makes 6 servings (It makes more than 6 servings)
